Actually, this is only half of what came in the box this week (minus the beets). Lots of squash! Internet, what in the world is that white thing? Can anyone name that squash?

Life: CSA Box #2!

Yesterday I picked up my second CSA box. I couldn't wait to get home and assess my loot! I was happy to find a couple of new additions.

Life: CSA Box #2!
Veggies & hoops what more does a girl need?!

What I found:
Turnips
Parsley
Blue Kale
Red Kale
Swiss Chard
Rainbow Chard
Red Romaine Lettuce
Spinach
Carrots
Spring Onions
Collard Greens

After I put everything away I whipped up a smoothie:
Strawberries
Blueberries
Spinach
Almond Milk
Ginger
Walnuts

Super yummy! It was heavy on the ginger which I love. I also used some of the red romaine lettuce on our veggie burgers last night. Okay, on to researching turnip recipes now. So far this one sounds like a winner. Keeping it simple is key!

Life: My CSA Box From South Central Farmers Cooperative

In case you've ever wondered what fourteen pounds of leafy winter green looks like... well, there you have it. On Wednesday I picked up my first CSA box from the South Central Farmers Cooperative filled with local, sustainable and organic produce. They have a drop-off location all of four blocks from my office. So convenient.

Here's what $15.00 bought me:
Red Kale
Blue Kale
Black Kale
Red Romaine Lettuce
Butter Crunch Lettuce
Cilantro
Collard Greens
Mustard Greens
Bloomsdale Spinach
Red Beets
Rainbow Chard
Swiss Chard

Thank goodness for my blender and Tim & Tessa's juicer. Otherwise, I don't know how I'd get through all of this before it starts to wilt.

What I've made so far:
Wednesday night I sauteed up the three Kales & two Chards with garlic, lemon juice, chili pepper powder and olive oil. We ate this with some Quinoa. Admittedly it was just okay...too many competing flavors amongst the greens. Lesson learned. For lunch the next day I made a salad with the romaine, butter crunch, red onion, walnuts, tomatoes, n/f Feta with a Vinaigrette dressing. Yum City! And last night while researching green smoothies I threw together a very non-green beet, blueberry, kale, walnut, n/f plain yogurt, vanilla almond milk smoothie...double yum city. In fact, I'm sipping on one of these as I type.

Between what we've already eaten and what I've given away I've still barely made a dent in the box. Yep, I foresee a major juicing extravaganza this weekend! Interweb, if you have any recipe suggestions feel free to leave 'em in the comments below!
