Life: My CSA Box From South Central Farmers Cooperative

In case you've ever wondered what fourteen pounds of leafy winter green looks like... well, there you have it. On Wednesday I picked up my first CSA box from the South Central Farmers Cooperative filled with local, sustainable and organic produce. They have a drop-off location all of four blocks from my office. So convenient.

Here's what $15.00 bought me:
Red Kale
Blue Kale
Black Kale
Red Romaine Lettuce
Butter Crunch Lettuce
Cilantro
Collard Greens
Mustard Greens
Bloomsdale Spinach
Red Beets
Rainbow Chard
Swiss Chard

Thank goodness for my blender and Tim & Tessa's juicer. Otherwise, I don't know how I'd get through all of this before it starts to wilt.

What I've made so far:
Wednesday night I sauteed up the three Kales & two Chards with garlic, lemon juice, chili pepper powder and olive oil. We ate this with some Quinoa. Admittedly it was just okay...too many competing flavors amongst the greens. Lesson learned. For lunch the next day I made a salad with the romaine, butter crunch, red onion, walnuts, tomatoes, n/f Feta with a Vinaigrette dressing. Yum City! And last night while researching green smoothies I threw together a very non-green beet, blueberry, kale, walnut, n/f plain yogurt, vanilla almond milk smoothie...double yum city. In fact, I'm sipping on one of these as I type.

Between what we've already eaten and what I've given away I've still barely made a dent in the box. Yep, I foresee a major juicing extravaganza this weekend! Interweb, if you have any recipe suggestions feel free to leave 'em in the comments below!

  1. Wow! Keep those recipe ideas coming. I keep making "suicide" versions by combining too many different types when juicing so can use the help :)

    1.5 ish cups almond milk (can also use reg. or soy milk
    1 avocado
    1-2 handfuls spinach (baby spinach recommended) and/or kale
    1 persian cucumber (or half regular or half english hothouse cucumber)
    1/4 cup ish parsley (curly)
    4 ish stems worth of mint leaves (leaves only)
    1 Tbls. Flax oil

    Optional but makes WAY yummier to add one or more of following:

    1/4 ish cup coconut milk (or add real coconut: both water and flesh)
    1 Banana
    1/2 mango

    Blend.

    ***We are known to add some vanilla protein powder or green alkalizing powder or even some (YUM) chai drink powder on occasion to shake things up
    in the world of shakes.

    2 handfuls of spinach
    1/2 small lemon
    1-2 persian cucumbers
    1c vanilla almond milk
    1 mango
    2 apples
    1 piece of ginger
    1 tbsp Flax oil

  6. Sunday Morning:

    1 beet
    1c black kale
    1 persian cucumber
    1 banana
    8 strawberries
    3/4c blueberries
    2T ground flax seed
    1c (or more) vanilla almond milk

    This one has a mild flavor. Very refreshing. We added the banana last minute to ramp up the taste a bit. The banana also helped to give it a really smooth texture.
